Perking Up Dishes With Branston

I like to use many condiments when I eat, it’s nothing to do with food being bland or boring. I just like the additional flavour and texture to a meal. Of course there are many things that can help with improving flavour, not all of them to do with the dish itself. Improving your own palate can help, as well as swapping out smoking for Puffco proxy. But there are also changes within the meal which you may want to make too.

So this is why I like perking up my dishes with Branston.

Branston pickle is something from most of our childhoods, we all knew someone who would plop a huge blob of Branston pickle on their sandwich, as a side for hotpot or even use as a dip with cheese and crackers.

Branston have spread their winds and made many condiments for all kinds of meals. So this is a mini review and also a tasty recipe for something I made earlier.
Of course, a hotpot (Well, wouldn’t be a Cheshire/Lancashire bird without one)

As well as a condiment, you can use Branston pickle in the meal too.

When cooking hotpots, cottage pie, beef stew and even spaghetti bolognese I add a dollop of Branston pickle in there for some much needed flavour.

My favourite at the moment is hotpots, as it gets cooler, I make a casserole and use it several ways.

The base is easy. Beef stock, diced braising steak, onions, carrots, swede, parsnip, peas, thyme, rosemary, salt and pepper.
Worcestershire sauce, dollop of Branston pickle and a dash of mustard.

Firstly brown the braising steak, add onions to soften. Also add salt, pepper. mustard and a dash of Worcestershire sauce.
Fill up with beef stock and add diced carrot, swede and parsnip.
Also add thyme, rosemary and a dollop of Branston pickle to taste.

Cook on low in oven for 6 hours, or pop in a slow cooker on low for 8.

After 6-8 hours, take out of oven ready to add the topping.

You can do this 2 ways, using a shortcrust pastry or sliced potato covered in butter to crisp.

Either way is great, with an added extra to potatoes, scatter a little cheese on top and when finished, a blob of Branston pickle on top.

If you really want to do something a bit different, use sweet potato on the top! Make sure you grill to make it crispy. Yum!

I love Hunters Chicken, it’s one of my favourite foods and the Branston BBQ sauce is the perfect sauce for this dish.

Branston caramelised onion chutney is is perfect for Indian dishes as a side, also delicious on burgers with a spot of mustard.

Sweet chilli pickle is again another amazing condiment, this is perfect for burgers or perking up a sandwich.

Hot dog relish with tomato and red pepper – Now this is something else.

I love hot dog relish, but with red pepper gives t a bite which I love. This is also amazing on burgers too.

These are some BBQ faves and must haves. With the fab spoon of course!
